- 1 1/4 cups quick cooking oats
- 3/4 cup all purpose flour
- 1/2 cup whole wheat flour
- 2 tablespoons white sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 3 eggs
- 2 1/4 cups milk
- 1 teaspoon vanilla
Instructions
- In a large bowl, mix oatmeal, flours, sugar, baking powder and salt.
- Make a well in the center of the bowl.
- Add eggs, milk and vanilla.
- Stir until moistened. Batter can be lumpy.
- Spray your skillet with cooking spray.
- Preheat to 350 degrees for an electric skillet or medium-high heat on the stove top.
- Using a 3 tablespoon scoop, pour batter in skillet and heat 4-6 minutes on each side until medium brown.
- Serve with butter and maple syrup or your favorite topping.
