We have a little confession…we often buy the boxes of flavored rice to serve as a side dish. I’m not really sure why, because making it from scratch doesn’t take long at all. The only thing I can think of is that we never had a really good recipe to use.
Well, now all that has changed, because this recipe for Mexican Red Rice is delicious, and super easy too!

Ingredients
- 1 tablespoon vegetable oil
- 1/2 cup onions, chopped finely
- 2 cloves garlic, minced
- 1 teaspoon ground ancho chili pepper or chili powder
- 1/4 teaspoon kosher salt
- 1 cup long grain rice, brown or white rice {we used brown}
- 1 3/4 cups chicken or vegetable stock
- 3/4 cups salsa
- 1/4 cup water
- 1/2 cup cilantro, finely chopped
Instructions
- In a medium saucepan, heat oil over med-high heat
- Add onions, garlic, ground ancho chili pepper and salt, cook for 2 minutes
- Add uncooked rice, cook and stir for 1 minute
- Add broth, salsa and water
- Bring to a boil, reduce heat, cover and simmer for 20 – 30 minutes or until rice is tender
- Remove pan from heat, remove lid and cover with a clean kitchen towel to absorb any liquid, replace lid and let set for about 5 minutes
- Fluff with fork and stir in cilantro
- Prep Time: 5 minutes
- Cook Time: 30 minutes
