Ingredients

Scale
  • 4 cups of grape or cherry Tomatoes – yellow and red
  • 1/8 cup of Kosher Salt
  • 2 Garlic Cloves, sliced
  • 1 tablespoon Green Onions, sliced thinly
  • 3/4 cup Olive Oil
  • 1 tablespoon white or red Wine Vinegar
  • 1 tablespoon fresh Basil, torn
  • 1 teaspoon Dried Thyme
  • 1/4 teaspoon Black Pepper


Instructions

  1. Cut tomatoes in half, place in medium bowl, sprinkle with salt and set aside for 30 minutes
  2. In small saucepan, saute garlic and onions in a very small amount of hot oil until golden brown, cool completely
  3. Combine Olive Oil, Wine Vinegar, Basil, Thyme and Pepper
  4. After tomatoes are ready, combine all ingredients
  5. Transfer to airtight container and place in fridge overnight
  6. Store leftover in fridge
