Loaded Potato Bites

Use up your leftover mashed potatoes in these Loaded Potato Bites! Filled with all the familiar flavors of a loaded baked potato – sour cream, bacon and cheese.

Ingredients

  • 3 cups cold mashed potatoes
  • 1/2 cup sour cream
  • 2 cups shredded Colby-Monterrey Jack cheese blend
  • 4 green onions, chopped
  • 4 strips bacon, cooked and chopped
  • 1 large egg
  • 1 cup bread crumbs
  • 1 teaspoon Seasoned salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large mixing bowl combine the cold mashed potatoes, sour cream, cheese blend, green onions,bacon and egg.
  2. In a separate bowl mix together the bread crumbs, salt and pepper.
  3. Roll the mashed potato mixture into 1 inch balls, flatten to a thickness of less than 1/2 inch and coat them with the bread crumb mixture.
  4. Add two tablespoons of butter to a medium hot skillet, cook until browned and then flip and cook until browned.

Notes

BAKED – spray cookie sheet with non-stick cooking spray or line with silicone mat or parchment paper. Add patties to cookie sheet.
Bake at 400 degrees for 12-15 minutes or until slightly browned on the edge, flip patties, return to oven and continue baking for 2-3 minutes.
