I have no doubt there is an alternate universe and it is populated with monsters. So as I pondered what their Halloween celebrations would be, it occurred to me that most likely they would think of us as monsters. Which in turn made me realize they would have appetizers like these Ghoulish Guacamole Eyes to get things rolling.
If you have never made guacamole before don’t be ashamed, neither had we before I made these Ghoulish Eyes for an early holiday party. But after comparing the price of fresh fruit to ready made guacamole and realizing I could make it for 50 percent less I decided to go for it. And as Liz says, it’s easy-peasy.
It was a simple as cutting the fruit in half and removing the seed, spooning out the flesh and mashing with a fork. Then I finished off with adding lime juice, garlic powder and a pinch of salt.
What a fantastic way to get the party started.

Ingredients
- 1 ripe medium sized avocado
- 1 tablespoon lime juice
- 1/4 teaspoon garlic powder
- pinch of salt
- 12–16 cherry tomatoes
- 8 pitted ripe olives, cut in half
Instructions
- Mash avocado into a pulp with a fork, mix in lime juice, garlic powder and salt
- Cut 1/3 off the top of the tomato and remove the insides
- Spoon in guacamole and top with olive to resemble an eye
- Prep Time: 5 minutes
