Having your meals planned out is sometimes half the battle…having them prepared ahead of time is brilliant! Make ahead meals can make your life so much easier, and this Grilled Thai Chicken is a delicious start to a stress-free dinner.
Grilling season is quickly approaching and what better way to get dinner on the table fast then to have the meat all prepared and marinated ahead of time. We used Chicken Thighs, typically less expensive than Chicken Breasts, added the marinade in a large resealable bag and tossed it in the fridge. Then when it was time to start grilling, the chicken was ready to go.
We loved the flavor combination of ginger, garlic, soy sauce, fresh herbs and jalapenos. Doug whipped up a batch of Fried Rice to go with the Thai Chicken and we had dinner on the table in less than 30 minutes.

Grilled Thai Chicken Recipe

Description
Delicious make-ahead meal for Grilling Season. Recipe from PocketChangeGourmet.com. Adapted from Make-Ahead Meals for Busy Moms Cookbook
Ingredients
- 8–10 chicken thighs, boneless, skinless
- 1 tablespoon fresh ginger, finely grated
- 1 tablespoon Worcestershire Sauce
- 1 tablespoon garlic, minced
- 1 tablespoon brown sugar
- 1 1/2 tablespoon soy sauce
- 1 1/2 tablespoon olive oil
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh cilantro, chopped
- 1 or 2 jalapenos, finely diced and seeded {optional}
Instructions
Make Ahead
- Add all ingredients, except chicken to a large resealable bag and mix well
- Add the chicken and seal, turn the bag until the chicken is well coated with the marinade.
- Place in refrigerator up to 24 hours before grilling.
Freeze
- Place chicken and marinade in a freezer safe bag, label and freeze up to 1 month
Grilling
- Grill on medium heat for 10-12 minutes on each side
- Serve with Fried Rice

Liz says…I love the ease of Make-Ahead Meals. This Thai Chicken was really good, but not as flavorful as I was expecting, next time we will marinate longer and maybe add a little more ingredients.
Doug says…I added only 1 jalapeno, next time I will add 2 to kick up the flavor.
