Ingredients

- 1 pound ground beef
- 1 sweet red pepper, cleaned and chopped finely
- 3 green onions, cleaned and chopped finely
- 1 package of Taco Seasoning or Homemade
- 1 can Tex Mex Style Diced Tomatoes or Tomatoes with Green Chiles
- 2 cups water
- 1 1/2 cups elbow macaroni, uncooked
- 1 cup frozen corn
- 1 cup Mexican blend cheese
- Chopped Cilantro, optional for garnish
Instructions
- Brown meat, red pepper and onions in a large skillet until no pink remains in meat
- Drain, if necessary and return back to pan
- Stir in water, taco seasoning and tomatoes, bring to boil
- Stir in macaroni, cover and simmer on medium-low heat for 10 minutes
- Add frozen corn and continue cooking for 5 more minutes, stirring occasionally
- Remove from heat and sprinkle with cheese, cover and let stand for 2 minutes until cheese is melted
- Sprinkle with cilantro, if desired
- Serve immediately with bread or corn muffins if you like
