This week’s Farmer’s Market Friday is all about potatoes – red, yellow, blue, white, or sweet, I love them all! Potatoes get a bad rap much of the time, but it’s all about the preparation: frying potatoes or smothering them in cream or cheese simply adds a lot of calories to a vegetable that has it’s fair share of vitamins, minerals and fiber.
Of course I think it’s perfectly fine to have them fried or smothered – just occasionally (all things in moderation). But let’s give the humble potato it’s due: eating steamed, grilled, and baked potatoes or adding them to other vegetables is a great way to have potatoes more often and benefit from their nutrition as well as the enjoyment most people get from eating potatoes.
There are SO many ways to enjoy potatoes and I have found some great recipes to share for different cooking methods – and even a few ways to preserve potatoes, either for convenience or to store through the winter, so you can take advantage of the potatoes you will find in abundance at your farmer’s market!
