Homemade Beef and Barley Soup

  • 1½ pounds Beef Stew meat, cut into ½ inch chunks
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • ½ cup of celery, diced
  • ½ cup of carrot, sliced
  • ½ cup of onion, diced
  • 4 cups beef broth
  • 3 leaves fresh basil
  • 3 sprigs fresh oregano
  • ¾ - 1 cup pearl barley
  1. Heat a heavy skillet on the stove with a little oil, add the beef and season with salt and pepper, brown on all sides several minutes
  2. Add meat and vegetables to the Slow Cooker
  3. Pour in the beef broth and add fresh herbs, cook for 4-6 hours on low
  4. Add barley and continue cooking 45 minutes - 1 hour or until barley is tender
You can also make the soup on the stovetop, just add ingredients to a large pot after browning meat and veggies. Cook on low for 1-2 hours
