Grilled Chicken Skewers with Herb and Wine Marinade
- 2-4 skinless, boneless chicken breasts {depending on how many you are serving}
- ⅔ cup Hot to Trot White Blend 14 Hands Wine
- ⅓ cup extra virgin olive oil
- Juice of 1 lemon
- 2 tablespoons apple cider vinegar
- 3 tablespoons fresh basil, chopped
- 3 tablespoons fresh parsley, chopped
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh ground pepper
- ½ teaspoon salt
- Combine all ingredients for marinade in a bowl and set aside
- Soak wooden skewers 20-30 minutes
- Cut chicken into strips and thread onto skewer
- Place skewers in a 13x9 dish and pour marinade over
- Place in fridge over night or several hours
- Heat grill to medium-high and cook skewers about 7-10 minutes or until juices run clear
- Serve with rice or other side dish and a glass of 14 Hands Wine
Prep time does not include marinating. Allow at least 8 hours to marinade chicken
