Grilled Potato Salad Recipe

A delicious twist on an original side dish. Recipe from
  • 6-8 Potatoes {depending on size}
  • 2-4 tablespoons Oil {just enough to coat the potatoes}
  • Salt and Pepper to taste
  • 3-4 hard boil eggs
  • 3-4 strips cooked bacon
  • 3-4 green onions, chopped
  • Italian Dressing {we used about ½ a bottle}
  1. Wash potatoes and cut into small wedges
  2. Place in bowl and coat with oil, sprinkle with salt and pepper
  3. Place on grill on medium heat and cook about 20-30 minutes or until fork tender
  4. Cook bacon and eggs
  5. After potatoes are done, let them cool slightly and cut into large chunks, place in bowl
  6. Add crumbled bacon, chopped eggs and chopped green onions
  7. Stir gently
  8. Add dressing a little at a time until potatoes are well coated but not soaked
Liz says...Cooking the bacon on the grill was great. No mess or smell in your kitchen.
