Leftovers? Love them or hate them? This Easy Frittata Recipe will help you fall in love with leftovers again! It goes together in minutes and makes a hearty brunch or delicious dinner that your family will love!
  • 2 sweet potatoes, peeled and cut into small cubes*
  • *or substitute for 3-4 potatoes, peeled and cut into small cubes and see note about cooking
  • ½ cup onion, finely chopped (more if you like onion)
  • 4-5 pieces of bacon
  • 1 cup asparagus, sliced into 1" pieces
  • ½ cup ham, chopped
  • 5-6 fresh mushrooms, sliced
  • 8 eggs
  • ½ cup milk
  • 1 cup cheddar cheese, shredded
  1. Preheat oven to 350. Grease a 9x13 baking pan. Set aside
  2. In a saucepan full of water, boil sweet potatoes until tender. About 10 minutes. Drain. *
  3. * If using regular white potatoes, omit this step. Add potatoes in step 3 after cooking bacon and heat until soft.
  4. In a large skillet, cook bacon until crispy. Drain on paper towels and set aside.
  5. Return skillet to stove top and add onion, asparagus and ham to the bacon grease. Cook for 4-6 minutes until onions are translucent, and mushrooms and asparagus are cooked.
  6. Crumble or cut up bacon and add to skillet. Add ham and sweet potatoes. Stir to heat through.
  7. In a separate bowl, add eggs and milk and whisk until fluffy. Add to skillet and cook on the stove top until eggs are set on the bottom, and just beginning to set on the top.
  8. Transfer mixture to prepared 9x13 pan and sprinkle with cheese.
  9. Bake for 15 minutes or until a knife inserted in the enter comes out clean and the cheese is melted.
