Kung Pao Chicken

  • 1 - 1½ pounds boneless, skinless chicken, diced into ΒΌ inch pieces
  • ¼ cup Catalina Dressing, divided
  • ¼ cup peanut butter, creamy
  • 1 tablespoon soy sauce
  • 1-2 teaspoons chili sauce - depending on how hot you like it
  • 2 cloves garlic, minced
  • 1 tablespoon minced gingerroot - we used Gourmet Gardens
  1. In a small bowl, mix together 2 tablespoons dressing, peanut butter, soy sauce and chili sauce. Set aside.
  2. In a large skillet, heat remaining dressing, add garlic and ginger, cook and stir 1 minute
  3. Add the chicken, cook 2 minutes stirring frequently
  4. Stir in peanut butter mixture and cook 5-7 minutes or until chicken is done and sauce is thickened, stirring frequently
  5. Transfer chicken to plate and serve with broccoli and rice
