Make Ahead Breakfast Casserole

Save time in the morning by making this breakfast casserole ahead of time!

Serves: 9 servings
  • 3 English muffins, split in half
  • 1 package bacon
  • 2 cups cheddar cheese, shredded
  • 9 eggs, beaten
  • 2 cups milk
  • Salt and pepper, to taste
  • 2 tablespoons butter
  1. Preheat oven to 350 degrees
  2. Spray a 9 inch by 13 inch casserole dish with non-stick cooking spray
  3. Place muffin halves in dish and dot with butter.
  4. Layer bacon on top of muffins.
  5. Sprinkle with cheese.
  6. Mix eggs, milk, salt and pepper together.
  7. Pour mixture over muffins.
  8. Cover and refrigerate overnight.
  9. Remove from fridge 30 minutes before baking.
  10. Uncover and bake at 350 degrees for 40 minutes, or until firm.
