  • ¼ cup butter, softened
  • 3 tablespoons sugar
  • 2 eggs
  • ½ cup sour cream
  • ½ cup milk
  • 1 cup flour, all-purpose or gluten-free
  • ⅔ cup yellow cornmeal
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  1. Preheat oven to 375 degrees and spray a muffin tin with non-stick cooking spray
  2. In a large bowl, cream the butter and sugar
  3. Add eggs and mix well
  4. Add sour cream and milk, mix well
  5. Combine dry ingredients and add to wet ingredients, mix well
  6. Divide into muffin tin
  7. Bake for 12-15 minutes until golden brown
  8. Serve immediately or cool and store in airtight container
