There's few things better than coming home to a house filled with the aroma of homemade soup. This Crock Pot Vegetable Soup is simply delicious, and loaded with our favorite vegetables. Recipe from
Recipe type: Slow Cooker
Serves: 15 servings
  • 4 cups vegetable broth
  • 4 cups tomato juice
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • ½ cup chopped onion
  • 1 cup sliced mushrooms
  • 1 can of diced tomatoes
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 cups uncooked rotini pasta
  • shredded Parmesan cheese for topping if desired
  1. Add all the ingredients except the uncooked pasta and cheese to a 6 quart crock pot.
  2. Cover and cook on low heat for 8 hours.
  3. Add pasta and stir. Turn heat setting to high and cook for 20-30 minutes or until pasta is done.
  4. Serve with each bowl topped with a sprinkling of cheese.
