Tropical Fruit Salad with Dairy Free Topping

Serves: 8 servings
Fruit Salad
  • Any fruit you like, we used Pineapple, Honey Dew Melon, Nectarines, Peaches, and Kiwi.
  • Juice of 1 Lime
  • ¼ cup Cornstarch
  • ¼ cup Sugar
  • ¼ teaspoon Salt
  • 3 cups Silk Coconutmilk
  • 1½ teaspoons Vanilla Extract
  • Coconut and Lime Zest on top, if desired
Fruit Salad
  1. Clean and cut all fruit and place in large bowl
  2. Juice lime and mix into fruit
  1. In a large saucepan on the stove, combine cornstarch, sugar and salt
  2. Slowly whisk in Coconutmilk until all combined
  3. Heat to boiling, reduce to simmer, cover and cook for -10 minutes until thick and puddling like consistency
  4. Remove from heat and stir in vanilla
  5. Transfer to small bowl and chill for at least 1 hour
Tropical Fruit Salad
  1. Spoon fruit salad into bowls, add with a few teaspoons of topping, sprinkle with coconut and lime zest if desired
