Barbecue Pork Tenderloin Sliders
- 2 pound Pork Tenderloin
- Olive Oil
- 2 tablespoons lemon juice
- 1 medium red onion, sliced
- 2-3 tablespoons dried thyme
- 3-4 garlic cloves, smashed and sliced
- Barbecue Sauce, your favorite (I used Sweet Baby Ray's)
- King's Hawaiian Dinner Rolls
- Shredded Lettuce
- Clean and slice onion and garlic, place in Slow Cooker. Add lemon juice
- Add Pork, drizzle with Olive Oil and sprinkle with thyme
- Cook on low for about 4-5 hours or until internal temperature is 145 degrees
- Chop cooked pork and mix with barbecue sauce, about ½ cup depending on how many sliders you are making, add enough sauce to moisten pork
- Hollow out center of dinner roll with a knife, add a pinch of shredded lettuce and heaping tablespoon of pork mixture
- Drizzle with barbecue sauce
- Serve warm or cold
Cook time includes pork tenderloin slow cooker time.
