Cheesy Mashed Potato Casserole

A great make-ahead casserole too
Ingredients
  • 8-10 large potatoes, peeled, washed and cut into quarters
  • 4 oz {half package} Cream Cheese
  • ¼ cup heavy cream, milk or half-and-half
  • 1 stick butter
  • 2 cups Sharp Cheddar Cheese, shredded
  • ¼ - ½ teaspoon salt
  • ¼ - ½ teaspoon seasoned salt
Instructions
  1. Boil potatoes until fork tender
  2. Mash until smooth
  3. Add cream cheese, about ¾ of the butter, heavy cream, salt and seasoned salt
  4. Beat with an electric beater until smooth
  5. Fold in sharp cheese, reserving about ¼ cup to sprinkle on top
  6. Spread into a glass pan
  7. Dot with remaining butter and sprinkle with cheese
  8. Bake at 350 degrees for about 20 minutes or until cheese and butter are melted and bubbling
