Cheesy Mashed Potato Casserole
- 8-10 large potatoes, peeled, washed and cut into quarters
- 4 oz {half package} Cream Cheese
- ¼ cup heavy cream, milk or half-and-half
- 1 stick butter
- 2 cups Sharp Cheddar Cheese, shredded
- ¼ - ½ teaspoon salt
- ¼ - ½ teaspoon seasoned salt
- Boil potatoes until fork tender
- Mash until smooth
- Add cream cheese, about ¾ of the butter, heavy cream, salt and seasoned salt
- Beat with an electric beater until smooth
- Fold in sharp cheese, reserving about ¼ cup to sprinkle on top
- Spread into a glass pan
- Dot with remaining butter and sprinkle with cheese
- Bake at 350 degrees for about 20 minutes or until cheese and butter are melted and bubbling
