Pulled Pork Sandwiches with Root Beer Barbecue Sauce

Ingredients
1 (2½ to 3 pound) boneless pork sirloin roast
½ teaspoon salt
½ teaspoon ground pepper
1 tablespoon oil, vegetable or canola
2 medium onions, cut into thin wedges
1 cup Root Beer
6 cloves garlic, minced
3 cups Beef Broth
3 cups Root Beer (two 12 oz cans or bottles)
1 cup bottled chili sauce
8-10 hamburger buns
Instructions
Trim fat from meat, if necessary cut in half to fit into slow cooker
Sprinkle meat with salt and pepper
In a large skillet, heat oil and brown meat on all sides, transfer meat to slow cooker
Add onions, 1 cup of Root Beer, Beef Broth and garlic
Cover and cook on low for 8-10 hours or high for 4-5 hours
Sauce
In a medium saucepan, stir together 3 cups Root Beer and Chili Sauce
Bring to boil, reduce heat, simmer uncovered for about 30 minutes or until mixture is reduced to 2 cups, stirring occasionally
Sandwiches
When meat is done, transfer to cutting board, using two forks, pull meat apart into shreds
Serve on buns with lettuce and tomato and Root Beer Barbecue Sauce on the side (we used a squeeze bottle)
Notes
Make Ahead - Transfer pork mixture to airtight container, cover and chill for up to 24 hours. Or transfer to freezer container, cover and freeze for up to 1 month. Thaw overnight in fridge before serving. To reheat, transfer pork mixture to a saucepan, cover and heat over medium-low heat. If necessary, add 2-4 tablespoons water to keep mixture moist.
