Delicious and easy side dish for Mexican meals. Recipe from
Serves: 6 servings
  • 1 tablespoon vegetable oil
  • ½ cup onions, chopped finely
  • 2 cloves garlic, minced
  • 1 teaspoon ground ancho chili pepper or chili powder
  • ¼ teaspoon kosher salt
  • 1 cup long grain rice, brown or white rice {we used brown}
  • 1¾ cups chicken or vegetable stock
  • ¾ cups salsa
  • ¼ cup water
  • ½ cup cilantro, finely chopped
  1. In a medium saucepan, heat oil over med-high heat
  2. Add onions, garlic, ground ancho chili pepper and salt, cook for 2 minutes
  3. Add uncooked rice, cook and stir for 1 minute
  4. Add broth, salsa and water
  5. Bring to a boil, reduce heat, cover and simmer for 20 - 30 minutes or until rice is tender
  6. Remove pan from heat, remove lid and cover with a clean kitchen towel to absorb any liquid, replace lid and let set for about 5 minutes
  7. Fluff with fork and stir in cilantro
