Heart Shaped Roast Potatoes

Delicious, quick and easy! Fun for Valentine's Day in the heart shape, but could be simply cut into cubes or slices for any meal. Recipe from PocketChangeGourmet.com

Ingredients
  • 3-4 potatoes {amount will depend on how many people you are serving}
  • Olive Oil
  • Kosher Salt
  • Fresh ground Black Pepper
Instructions
  1. Peel and slice into ¼ inch slices
  2. Use a very small heart shaped cookie cutter and cut the potatoes
  3. Immediately place in a bowl full of cold water to prevent browning
  4. When you have all the potatoes cut, drain the water, and pat dry
  5. Toss with Olive Oil and place on a cookie sheet in a single layer
  6. Sprinkle with Kosher Salt and fresh ground Black Pepper
  7. Bake at 400 degrees for about 20-25 minutes
  8. Flip potatoes and continue cooking until golden brown, about 5 more minutes
