Campanelle with Italian Sausage, Peppers and Tomatoes

On the table in less than 30 minutes, this Italian pasta dish is bursting with flavor. Recipe from
  • 1 box Campanelle pasta or other short pasta
  • ¾ pound {about 4} Italian sausage brats or other sausage
  • ¼ cup Olive oil
  • 1 pint Grape Tomatoes
  • 1 small red onion, cut into 1 inch pieces
  • Peppers - red, yellow and orange about ⅓ from each to total 1 pepper - or you 1 red pepper
  • 2 sprigs fresh Oregano
  • ½ teaspoon Kosher salt
  • ¼ teaspoon Black pepper
  1. Cook pasta according to directions on box
  2. Meanwhile, slice sausage and cut peppers and onions
  3. Heat oil in skillet and cook sausage 5-7 minutes or until completely cooked - cook less if sausage is fully cooked
  4. Transfer sausage to a plate, leaving oil and drippings in skillet
  5. Add vegetables, oregano, salt and pepper to skillet and cook about 6-8 minutes or until tomatoes begin to burst. Remove oregano and drain the oil if necessary
  6. Drain the pasta reserving ½ cup water, return to pan
  7. Stir in sausage and vegetable mixture
  8. Add water and heat through
  9. Sprinkle with oregano leaves if desired, serve warm
