2 fresh zucchini, thinly sliced lengthwise
1 Tablespoon extra virgin olive oil
1 lemon, cut into wedges
4 oz freshly grated parmesan cheese

Wash and thinly slice the zucchini lengthwise and sprinkle with salt.

Heat olive oil in a large skillet or grill pan over medium heat.

Sauté the zucchini slices for about 3 minutes on each side.

Serve warm with a squeeze of lemon and a sprinkle of parmesan.

For extra garnish, top with fresh thyme, a little pesto, or gremolata.
