Description

Beautiful alone, atop grilled garlic bread, or nestled into noodles, this Easy Zucchini Parmesan rewards your taste buds in under 10 minutes.


Ingredients

2 fresh zucchini, thinly sliced lengthwise

1 Tablespoon extra virgin olive oil

1 lemon, cut into wedges

4 oz freshly grated parmesan cheese


Instructions

Directions:

 

  1. Wash and thinly slice the zucchini lengthwise and sprinkle with salt.

  2. Heat olive oil in a large skillet or grill pan over medium heat.

  3. Sauté the zucchini slices for about 3 minutes on each side.

  4. Serve warm with a squeeze of lemon and a sprinkle of parmesan.

Notes

For extra garnish, top with fresh thyme, a little pesto, or gremolata.
