For delicious, clean eating you can’t beat a beautiful meal like Roasted Rainbow Trout.
Its delicate flavor makes it an approachable fish for even picky eaters and it’s loaded with Omega-3s. Yay, for your heart and brain! It’s also one of the more sustainable fish in the U.S., so you can feel good about serving it to your family.
Plus, its quick prep and short cooking time lets you have wholesome roasted fish, boiled new potatoes, and steamed green beans on the table in about 25 minutes.
I grew up fishing for trout in spring-fed streams with my dad. Catching these beautiful fish is always an exciting moment and catching one big enough to keep and eat was the best!
Ingredients you will need:
- 2 large (or 4 small) Rainbow Trout filets (approx 1 1/2 lbs for 4 people)
- 1 lemon
- 1 clove fresh garlic, pressed or minced
- 1 Tablespoon capers
- 1-2 Tablespoons Extra Virgin Olive Oil
*For Optional Sides:
- 2 lbs New Potatoes
- 1 Tablespoon olive oil
- 1 lb fresh Green Beans
- salt and pepper

How to Prepare the Trout
- Preheat oven to 500°.
- *If preparing new potatoes and green beans, bring pot of water to boil for potatoes and place green beans in microwave safe dish with lid and 1 Tablespoon of water.
- Add the potatoes to the boiling water with 1 Tablespoon of salt. Set timer for 15 minutes.
- Line a baking sheet with aluminum foil.
- Place trout on the foil skin side down. Sprinkle with salt and cracked pepper.
- In a small saucepan, sauté the pressed garlic until golden.
- Stir in the capers and zest 1/2 of the lemon into the oil before spooning onto the fish.
- Roast in the middle of the oven for 6-8 minutes and remove from oven.
- Meanwhile, steam the green beans in the microwave for 4 minutes.
- Drain the potatoes and toss with 1 Tablespoon of olive oil and a pinch of salt and freshly cracked pepper.
Serve the meal with a wedge of fresh lemon and enjoy!
