A Bacon-Lettuce-Tomato Sandwich is one of the first sandwiches I learned to make while growing up, and this has remained one of our family’s favorites. There is something about the combination of the crisp lettuce, a perfectly ripe tomato and the crunch of bacon that has made the BLT Sandwich a go to recipe in almost every family. This easy to bake pie is a twist on a familiar family recipe.
While we all love a good sandwich, this BLT Pie is super easy, especially if you cook the bacon ahead. We served it for lunch, and the boys gobbled it up. You could certainly pair it with a couple side dishes for a budget friendly dinner as well.
Once you have cooked and crumbled the bacon, layer it in the bottom of a pie plate and then add the cheese. We used a Colby-Jack cheese combination, the original recipe from Betty Crocker calls for Swiss, which is a little more expensive, so we opted for the less expensive, plus we already had the cheese in the fridge. After you have combined the Bisquick {grab a coupon}, Mayo, Pepper, Milk and Eggs with a wire whisk pour over the cheese and bacon. Then place into a preheated 400 degree oven and bake 25-30 minutes until golden brown on top. After about 20 minutes I covered with aluminum foil so it wouldn’t get too browned. And after you have let the pie set for 5 minutes you can add the mayonnaise, lettuce and tomato or serve on the side for picky eaters like our boys.
The addition of mayonnaise makes the pie moist without adding additional fat from oil or butter. Hellmann’s has a new mayonnaise made with Extra Virgin Olive Oil that has less fat than the regular mayonnaise and might add a extra zing if that’s your thing. Ha… A poet and I didn’t know it.

Ingredients
- 12 slices bacon, cooked and crumbled
- 1 cup shredded cheese, Swiss, Colby-Jack or your favorite
- 1/2 cup Bisquick Mix
- 1/3 cup Hellmann’s Mayonnaise
- 3/4 cup milk
- 1/8 teaspoon pepper to taste
- 2 eggs
Additional ingredients for topping
- Shredded lettuce
- Sliced tomatoes
- Hellmann’s Mayonnaise
Instructions
- Cook bacon in oven {see tip at bottom of post}
- Spray pie plate with non stick spray
- Crumble bacon in bottom of pie plate
- Add shredded cheese
- In a small bowl, combine Bisquick, Mayo, Pepper, Milk and Eggs with a wire whisk
- Pour over cheese and bacon
- Bake at 400 degrees for 25 – 30 minutes or until top is golden and a knife inserted in the middle comes out clean.
- Let stand 5 minutes and serve with additional toppings
- Prep Time: 15 minutes
- Cook Time: 30 minutes
Kitchen Tip: Preheat oven to 400 degrees. Line a cookie sheet with foil. Add a wire rack, spray lightly with non-stick cooking spray. Add bacon. Cook for about 15 minutes or until crispy. Place on paper towel to drain.
Cook all the bacon at once and store in ziploc bags for other meals.
