Ingredients
Scale
Pancakes
- 1 cup flour
- 1 tablespoon sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup milk {a little less or a little more is fine depending on the consistency you like}
- 2 tablespoons oil
Cinnamon Filling
- 4 tablespoons {1/2 stick} butter, melted {completely}
- 1/4 cup plus 2 tablespoons brown sugar, packed
- 2 teaspoons cinnamon
Glaze
- 1/2 cup powdered sugar
- 2–4 tablespoons milk {depending on consistency}
Instructions
Pancakes
- In a large measuring cup, whisk together dry ingredients
- Add wet ingredients and mix well
- In a small bowl, combine ingredients for cinnamon filling, pour into a resealable bag
- Heat griddle to about 325 degrees {not super hot} – add non-stick cooking spray
- Add pancake batter to griddle – I use a 1/4 cup measuring cup
- Cook pancake until it starts to bubble
- Snip off a VERY small corner on the bag, swirl the cinnamon filling onto the pancake
- Continue cooking pancake about 2 minutes or until brown, flip quickly so the cinnamon stays in the middle
- Continue cooking another 2 minutes or until brown
- Mix glaze and drizzle over pancakes
