Chicken Gyros with Fresh Tzatziki

Ingredients

Scale

Fresh Tzatziki

  • 2 cups Greek yogurt (drained)
  • 1 medium cucumber (peeled,seeded and diced)
  • 3 cloves of garlic (minced)
  • 1 tablespoon olive oil
  • 2 teaspoons white wine vinegar
  • 4 mint leaves (minced)
  • Kosher salt (pinch or to taste)

Chicken Gyros

  • 23 chicken breast {boneless, skinless}
  • Greek Seasoning
  • 1 large Red or White Onion, thinly sliced
  • 2 large Tomatoes, thinly sliced
  • 68 Pita Bread
  • Fresh Oregano, finely chopped
  • Fresh Parsley, finely chopped
  • Fresh Tzatziki

Instructions

Fresh Tzatziki

  1. Drain Greek yogurt over night.
  2. Peel cucumber and split in half, remove seeds with a spoon and finely dice.
  3. Place diced cucumber into a cloth towel and squeeze excess moisture out.
  4. Blend together all ingredients in a medium bowl, refrigerate until serving

Chicken

  1. Heat grill to medium-high
  2. Rub with Greek Seasoning, place on grill and cook 5-7 minutes on each side or until juices run clear.
  3. Remove from grill and let set about 5 minutes before slicing thinly

Gyros

  1. Heat pita bread in stove or microwave
  2. Spoon tzatziki sauce on pita bread and layer with chicken, onions and tomatoes
  3. Sprinkle with fresh herbs
