- 1 box Campanelle pasta or other short pasta
- 3/4 pound {about 4} Italian sausage brats or other sausage
- 1/4 cup Olive oil
- 1 pint Grape Tomatoes
- 1 small red onion, cut into 1 inch pieces
- Peppers – red, yellow and orange about 1/3 from each to total 1 pepper – or you 1 red pepper
- 2 sprigs fresh Oregano
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon Black pepper
Instructions
- Cook pasta according to directions on box
- Meanwhile, slice sausage and cut peppers and onions
- Heat oil in skillet and cook sausage 5-7 minutes or until completely cooked – cook less if sausage is fully cooked
- Transfer sausage to a plate, leaving oil and drippings in skillet
- Add vegetables, oregano, salt and pepper to skillet and cook about 6-8 minutes or until tomatoes begin to burst. Remove oregano and drain the oil if necessary
- Drain the pasta reserving 1/2 cup water, return to pan
- Stir in sausage and vegetable mixture
- Add water and heat through
- Sprinkle with oregano leaves if desired, serve warm
