Happy Monday! I hope you all enjoyed the Halloween Party Food! Doug and I had fun creating it for you. We will be sharing a little re-cap plus some more fun recipes that we thought you might like, next week.
It’s funny how you can get inspiration for a recipe. This past weekend, Doug, Casey {our youngest son} and I walked uptown to look at the stores and ended up having a late lunch. On the restaurants breakfast menu they had Breakfast Pies, I told Doug right away they would be great to share with you all.
So we talked about the ingredients, changed it up a bit and Doug came up with this amazing little pie that is great for a hearty Breakfast or even Dinner.
This little Breakfast Pie combines everything that makes up a great breakfast, from the seasoned hash browns to the fluffy egg interior and to finish it off we served it on a bed of creamy sausage gravy. You can add more of your favorite breakfast ingredients to change this up for your family, I could see adding some ham and onion to make a Western style pie or adding bacon for another meat. Have some fun and explore some different combinations.

- Total Time: 50 minutes
- Yield: 6 Breakfast pies 1x
Description
A twist on the traditional Pot Pie. Hashbrown crust filled with eggs, sausage and cheese, topped with pie crust. Original Recipe from PocketChangeGourmet.com
Ingredients
- 30 ounces shredded Hash browns
- 4 Tablespoons butter, melted
- 4 Eggs
- 4 Tablespoons heavy whipping cream
- 1 Cup shredded cheese
- 1 pound Pork Sausage
- Green onion, chopped finely
- 1 ready-made pie crust
- Sausage gravy mix
- Salt and Pepper to taste
Instructions
- In a bowl mix hash browns and melted butter, season to taste with salt and pepper
- In a large muffin tin form hash brown mixture, being sure to completely cover the sides and bottom
- Bake for 20 minutes at 450 degrees, until golden and beginning to crisp
- While that is cooking fry up sausage and set aside
- In a large mixing bowl combine eggs, heavy whipping cream and 1/4 of sausage
- When the hash browns are done pour the egg mixture into them
- Top with green onions and shredded cheese
- Place cut pie crust on top
- Lower oven temperature to 350 degrees and bake for 15-20 minutes until firm.
- While pies are cooking prepare your sausage gravy and add remaining sausage
- Prep Time: 15 minutes
- Cook Time: 35 minutes
