Sometimes we need to pull a quick dessert together, and when strawberries are in season, this 5 Minute GF Dessert will take the cake.

Whipping up Strawberry Lemon Cookies’n’Cream honestly takes all of 5 minutes with 5 ingredients, but is sure to earn 5 stars.

Why you’ll love this 5 Minute GF Dessert:

This 5 minute GF dessert has only 5 ingredients: lemon, strawberries, whipping cream, sugar, and Tate’s GF Lemon Cookies.

The end result is a modified strawberry shortcake using lemon cookies. But since we use store-bought cookies, it’s more like Strawberry Short Cut!

I assume you’re in a hurry, so let’s get right to it!

Ingredients:

  • 1 lb fresh, ripe strawberries
  • 1 Meyer lemon
  • 1 cup heavy whipping cream
  • 4 Tablespoons sugar (2 for berries/2 for whipped cream)
  • 1 package Tate’s GF Lemon Cookies

Instructions:

  1. Wash and slice fresh, ripe strawberries. Sprinkle with 2 Tablespoons of sugar and let them macerate.
  2. Zest 1 Meyer lemon (or regular lemon). Meyer lemons are usually showing up around the time the strawberries do so I like to use them together.
  3. Beat 1 cup heavy whipping cream with 2 Tablespoons sugar and the grated lemon zest.
  4. Top store-bought GF Tate’s Lemon Cookies with a dollop of the whipped cream and some of the sliced strawberries for a the perfect blend of sweet and tart.

Note: I use my immersion blender for making the whipped cream and it works beautifully. No need to break out the stand mixer for this 5 Minute GF Dessert!

Or, put your kids to work by placing the cream, sugar and zest in a jar with a tight-fitting lid and let them shake it till it’s whipped cream. Just make sure to stop them before it becomes butter:)
