Happy Monday friends! Did you enjoy your weekend? We spent most of the day at the ballpark on Saturday, and came away with two wins. That’s always fun! And then we worked all day yesterday, creating several yummy recipes for you.

Our Weekly Menu Plan is full of quick and easy recipes since we are right in the middle of Baseball and Track season, and gone during dinner prep time.

Budget Friendly Weekly Menu Plan

Monday – Individual Chicken Pot Pies, Mashed Potatoes

Tuesday – Easy Barbecue Chicken Salad

Wednesday – Taco Ring, Chips & Salsa

Thursday – General Tso Chicken and Rice

Friday – Italian Meatball Subs, Garden Salad

Saturday – Shanghai Wings and Oriental Noodles

Sunday – Pepperoni Pizza Ring

It’s time again for the Secret Recipe Club, where we are assigned a blog and choose one of the recipes from that blog to share with our readers. This month we were given Permanent Posies, where you will find lots of down home cooking recipes and a weekly linky party, Tuesday’s Tasty Tidbits.

We have been wanting to try Chicken and Dumplings for awhile and since Permanent Posies calls her recipe the best, we thought we would give it a try.

Chicken and Dumplings Recipe

Description

Make Chicken and dumplings with no fuss using canned biscuit dough.


Ingredients

Scale
  • 23 cups of cooked chicken {roast your own, cook in the Slow Cooker or buy one at the store}
  • 1 tube Grands Homestyle Canned Biscuits
  • 3 stalks celery, chopped
  • medium onion, chopped finely
  • 3 tablespoons butter
  • 1/2 cup milk
  • 3 tablespoons flour
  • 1/4 cup half & half
  • Salt and Pepper to taste

Instructions

Chicken

  1. To make Chicken & Dumplings more flavorful, we suggest you boil a whole chicken in water
  2. After the chicken is done, let cool and de-bone chicken, set aside 2-3 cups of chicken
  3. In a large pan, melt butter and saute celery and onion until tender
  4. Combine milk and flour in a jar and shake well
  5. Add 2-3 quarts of chicken broth, sauted onions and celery, milk mixture,and half and half to a large pot. Bring to a rolling boil
  6. Cut biscuit dough into quarters and add to pot once it boils
  7. Return to boil and cook for 10 minutes
  8. Add chicken and heat through
  9. Salt and Pepper to taste
  • Prep Time: 10 minutes
  • Cook Time: 25 minutes

  1. looks very tasty. I was thinking dumplings in the “perogie or won-ton” sense, so this is a tasty surprise.

  3. I’ve never even had chicken & dumplings, but my dd loves Cracker Barrels – we tried to make it for her once- HUGE FLOP, but yours looks really yummy, may have to give it a go. Found you through MPM and your blog is really appealing. Your menu sounds very much like our style. 🙂

  4. Well, did you like them? They are pretty fattening and I wish I could have some right now! Great SRC post! I really messed up on mine and though I had it up on my sight, I had it hidden. Then, I forgot to post it at 11…..which I would have discovered my mishap had I not forgotten. Oh, well…..that is the story of my life.
