One of my favorite Summer meals is a vegetable only meal, using all the fresh ingredients from the Farmer’s Market. We kick off the Weekly Menu Plan with Meatless Monday. And the rest of the week is filled with favorite grilling and slow cooker recipes.
Have you been to the Farmer’s Market this Summer? We have several in near by cities that we love. I will certainly miss all the fresh produce this Winter.
Monday – Meatless Monday Veggie Night – Fried Zucchini Sticks, Sweet Corn, Slow Cooker Green Beans, Cucumber Salad
Tuesday – Beefy Noodle Casserole (make 2/freeze 1) and Salad
Wednesday – Grilled Southwest Chicken Wraps, Chips and Dip
Thursday – Grilled Barbecue Bacon Pork Chops and Rice
Friday – Homemade Pizza Pockets and Salad
Saturday – Teriyaki Beef Noodle Bowl and Salad
Sunday – Slow Cooker Roast Beef, Mashed Potatoes and Corn
Dessert of the Week – Peanut Butter Swirl Bars
