This Fried Egg Sandwich is composed of all of the best that breakfast has to offer, eggs, potatoes, cheese, sausage or bacon, and biscuit. Being able to combine all these into a scrumptious sandwich has been a goal of mine. I’ve succeeded in making a Breakfast Pie and recreated a Breakfast Biscuit Bowl from one of my favorite eatery’s. But I’ve not had much success with a sandwich, that is until now! Let me introduce you to my Ultimate Fried Egg Sandwich with Maple Sausage Biscuits.

This was a learning experience, oh let me tell you it was a learning experience. See I’m a novice when it comes to making any type of bread or pastry from scratch. So when I started down this path I had a lot of bravado or should I say false bravado, how difficult could it be I thought to myself. Just throw a few ingredients together, mix and bake and ta-da you have a biscuit. Far from the truth. Let me tell you of my trevails and maybe along the way I can impart some wisdom.

Ok, let’s start…

Batch 1, I made my first attempt according to the directions, once everything was blended together it looked like a gloppy mess so I thought I must have done something wrong and I thought,”I can fix this all I need to do is add more flour” so I did.

Baked them up and guess what I got…hockey pucks that tasted like a mouth full of flour.

Batch 2, remade the recipe according to the recipe and wouldn’t you know it, I got a gloppy mess again. However this time I called in back-up (i.e. Liz) and she was like, “what’s the problem, all you need to do is kneed the dough and add a little flour”. So she did her thing and let me tell you they looked a lot different from my attempt. So then I cut the dough with a biscuit cutter and threw them in the oven at the temperature and for the length of time the directions called for.

Baked them up and guess what I got…nice high flaky over-cooked burnt hockey pucks.

Batch 3, had just enough dough left over from Batch 2 for one lonely biscuit, So I carefully folded and kneeded it into a biscuit and after being scolded by Liz for having the oven too hot and not watching it while it baked I gingerly placed the lone survivor into the oven and hoped for the best.

Baked that one up and guess what I got…perfection, or at least for now.

So what wisdom did I garner from this exploit;

  1. When all esle fails go to an experiencd cook for advice.
  2. Watch your oven, never take for granted that the cooking times and temperatures on recipes work for your equipment.
  3. Don’t give up.

And now that that fiasco is finished I moved onto the assembly so here’s the recipe…

  2. These look amazing. Would love to put on Pinterest…..will try, but I am a terrible biscuit maker.

  3. Im sitting here in New Zealand trying to see how I could make this. We don’t have biscuits like yours are, we would call yours a scone LOL..very confusing, especially me. Would I put it between two slices bread, that’s what wed call a sandwich…Thank you to all for your neat postings, and sharing recipes..Brenda

    • Hi Brenda, Thanks for stopping by! You could certainly make the biscuits like the recipe, or even take a scone and cut it in half. Either way, it’s pretty yummy!

    My favorite breakfast sandwich comes with a story. My father, Bruce, loved these sandwiches so, one day he asked at his favorite diner in Spartanburg, South Carolina, Lil’s Diner, if Lil would make him one. She made one and soon added it to the menu as Bruce’s Special, after my father..

    You take two slices of plain white toast and apply Duke’s Mayonnaise liberally. Scramble an egg or two and place them on the toast. Then, add bacon, lettuce, and tomato.

    As an alternative, you can add American cheese when scrambling the eggs. Also, one can add onion and/or bell pepper to the eggs while cooking.
