Slow Cooker Enchiladas

We all know that using your Slow Cooker can be a great time saver but what about a budget saver. Often times we think of our Slow Cooker as an appliance that helps us get dinner on the table without a lot of effort or time, and it definitely does that. But did you know that it can also help you stretch your grocery dollars.

These Slow Cooker Enchiladas are the perfect example of that. By adding simple, less expensive ingredients like beans to the Slow Cooker, the flavors blend well during the longer cooking process.

All this week, we have teamed up with ALDI to share some of our favorite budget friendly recipes with you. On Monday we shared Barbecue Chicken and Rice, a One Dish meal that goes together really quickly with little clean up involved. Then on Tuesday, we served up Apple Crumble Cupcakes over at Hoosier Homemade.

These Slow Cooker Enchiladas were a nice change of pace from the other recipes that we make in the Slow Cooker. And they were super easy too. We found everything we needed at ALDI and the ingredients were all top quality.

The other nice thing about these Slow Cooker Enchiladas is that you can add or subtract the ingredients you like. Maybe your family doesn’t like green pepper but they like black olives – toss them in! We like the combination of Black and Pinto Beans, but you could certainly change that as well.

After you brown the ground beef, onions and green pepper, add the beans, tomatoes and seasonings. Lightly coat your Slow Cooker with non-stick cooking spray, then begin with a cup of the ground beef mixture.

Then layer the tortilla and sprinkle with a blend of the cheeses.

Repeat the layers until the ground beef and cheese is gone. Serve with your favorite toppings for a delicious meal your family is sure to love!

Ingredients

  • 1 pound Ground Beef
  • 1 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 1 can (15.5 0z) Black Beans, rinsed & drained
  • 1 can (15 oz) Pinto Beans, rinsed & drained
  • 1 can (15 oz) Diced Tomatoes with Green Chilies, undrained
  • 1/3 cup water
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Ground Cumin
  • 1/2 teaspoonSalt
  • 1/4 teaspoon Black Pepper
  • 1 cup Shredded Sharp Cheddar Cheese
  • 1 cup Shredded Mexican blend cheese
  • 6 Flour Tortillas

Instructions

  1. In a skillet, brown the ground beef, onions and green pepper until beef is browned and vegetables are tender. Drain
  2. Add the beans, tomatoes, water and seasonings, bring to a boil. Reduce heat, cover and simmer for 10 min.
  3. Combine the cheeses.
  4. Coat the inside of the Slow Cooker with non-stick cooking spray, layer 1 cup of beef mixture on the bottom.
  5. Cover with tortilla, sprinkle with 1/3 cup cheese. Repeat layers until ingredients are gone.
  6. Cover and cook on low for 4-5 hours or until heated through.
  7. Serve with shredded lettuce, salsa and sour cream, if desired.
  • Prep Time: 10 mins
  • Cook Time: 4 hours

  2. Looks like a great idea. If you don’t have a stove (as I don’t currently since kitchen is gutted), you can cook your beef, onions and green peppers in the microwave in a pyrex measuring cup.

  7. This isn’t an entry because I’m not acquainted with Aldi’s….probably not here. Here’s the burning question, though. Can you really get that enchilada out of the crockpot in one piece? I’d love to know if it required some rebuilding> Thanks. Looks so good.

    • Hi Susan, yes, we sprayed the slow cooker and we were actually surprised it came out just like the picture. No rebuilding. We used 2 spatulas and lifted it out.

    • Hi there, we did not try the enchiladas that way, but I don’t see any reason why you couldn’t. You may need to cook a bit longer though.

  11. -Made these for dinner tonight and were a big hit with young and old alike. Came out of the pot with no problems.
    My tip I bought 3 lbs. of ground beef and cooked it with the onions and peppers and put two pkgs. in the freezer for even quicker prep the next time. I shop at Aldi’s at least once a week. This one is a keeper.

  13. as a long time enchilada maker and eater….using corn tortillas is how we make and eat them….but baked in the oven, in the crock pot they might fall apart….it will still be tasty…but not layered like flour tortillas will be….I like you crock pot way…..

  14. Love the recipe. Very easy and affordable. I little tip I would throw out there is to just use 1 pack of the Casa Mamita Taco Seasoning Mix instead of creating the seasoning using individual ingredients. Its quicker and the pack only costs 35 cents.
    Also I don’t use the slow cooker but rather wrap my filling in the tortillas and place them in a greased casserole dish cover with enchilada sauce and generous amounts of cheese and bake in oven for about 15 minutes then serve.
    My kids absolutely loves them!
