It’s that time of year…time to get out those Crockpots, dust them off, and cook up a delicious comfort meal! During the Summer months, I often think about using the Crockpot to cut down on heat in the kitchen, but somehow it doesn’t seem to get done. But during the Fall and Winter months, we cook at least one meal every week in the Crockpot. This Savory Pork Loin has the sweetness and tartness of apple juice and honey but also the warm, savory flavors of garlic and Dijon mustard.

There are so many great things about cooking your dinner in the Crockpot, but the thing I love most is the ease… throw all the ingredients in, turn it on, and let it cook away.

With the rising cost of groceries, and especially meat, we need to trim our budget whenever possible. Recently I picked a Pork Loin at Walmart for around $8, bought it home, and cut it in half. The first half was made into Barbecue Pork Sandwiches and the second half into this Savory Pork Loin.

Description

Ingredients

Scale
  • 45 pound Pork Loin Roast
  • 1 cup apple juice
  • 12 teaspoons garlic powder {I used 2 and it was a bit too much, season how you like it}
  • 1 teaspoon salt
  • 1/2 cup honey
  • 1 tablespoon Dijon mustard

Instructions

  1. Place Pork Loin in the Crockpot, fat side up
  2. Pour in apple juice
  3. Sprinkle with garlic powder and salt
  4. Mix honey and mustard and pour over roast
  5. Cover and cook on low for 8-10 hours

If the pork loin is still tough, it means that you probably haven’t allowed the collagen to break. You can ensure this by extending the cooking time and seeing if there is enough liquid.
