Rainbow Fruit Skewers and Dip

We are kicking off a little St. Patrick’s Day celebration today with these fun Rainbow Fruit Skewers! Over the next week or so, we will be sharing recipes to put a little “green” in your St. Patrick’s Day Dinner.

Since it’s Rainbow Week over at Hoosier Homemade, we thought it would be fun to share one of our favorites…Fruit and Dip, but kick it up a notch by creating a Rainbow.

With just a few simple ingredients, and a couple supplies, you can create these Rainbow Fruit Skewers for your St. Patrick’s Day Dinner. They are fun to eat and when you add the Fruit Dip, the kiddos won’t even think about the fruit being good for them!

All of the supplies and ingredients are from Walmart, including the skewers {find them in the housewares aisle} and the St. Patrick’s Day Pot of Gold!

The Fruit Dip is made with only 3 ingredients; cream cheese, marshmallow fluff and a splash of orange juice. You could also use fat free Cool Whip instead of the marshmallow fluff, combine it with fat free cream cheese, and you have yourself a low calorie treat.

By adding the mini cupcake liners to the bottom, it catches the juice from the fruit and keeps little fingers {or adult hands} from getting sticky.

Fruit Dip Recipe

Ingredients

  • 1 {8 oz} package cream cheese, softened
  • 1 {8 oz} tub of marshmallow fluff
  • 2-4 tablespoons orange juice

Instructions

  1. Place cream cheese in a large bowl and beat until fluff
  2. Add the marshmallow fluff and orange juice
  3. Beat until smooth
  4. Serve with Fruit Skewers

We’ve been making a delicious fruit dip with almost those same ingredients… but we use strawberry cream cheese and fluff! It’s so YUMMY! Everyone loves it!
