Hellmann’s Chicken Challenge is on! Each week on Hellmann’s, two chicken dishes, from Chipotle Lime Crusted Chicken to Baked Buffalo Chicken, will go head to head with the popular Parmesan Crusted Chicken.
Doug and I were supposed to be heading to NYC today to help kick off the Hellmann’s Chicken Challenge, but things didn’t work out like we wanted, so we will just have to cheer from home this time.
Moms across the country are encouraged to participate by trying one of the featured Hellmann’s chicken recipes each week, and then casting votes for their favorites. After voting, they can enter into a weekly sweepstakes for a chance to win one of four $250 grocery gift cards. If Hellmann’s receives more than 10,000 entries, the value of the grocery gift cards doubles to $500!
Doug and I made the Parmesan Crusted Chicken this past weekend, and the boys loved it. I’m adding the Honey Mustard Chicken Fingers to our menu this week and we shall see if they beat the Parmesan Crusted Chicken.
With just 4 simple ingredients, this recipe is not only quick and easy, it’s delicious. The Hellmann’s Mayo makes the chicken moist and tender. We buy chicken in a large package at Walmart, and the breasts are pretty thick, so Doug just butterflied them to make the cooking time quick too.
- 4 Chicken Breasts, boneless and skinless
- ½ cup Hellmann's Mayo
- ¼ cup Parmesan Cheese, grated
- 4 teaspoons Italian seasoned bread crumbs
- Preheat oven to 425 degrees
- Combine Hellmann's and Parmesan Cheese in a small bowl
- Place chicken in a shallow baking dish
- Spread on chicken
- Sprinkle with bread crumbs
- Bake for 20 minutes or until chicken is cooked and no longer pink
We served our Parmesan Crusted Chicken with buttered Fettuccine Noodles and Steamed Broccoli.
