Breakfast is good for the soul. There are few things better, seriously you don’t often make dinner for breakfast but breakfast for dinner is a treat. These Pancake Puffs with Fruit are a treat for sure.

This is one of the funnest recipe I have tried in awhile, if you have small children it’s a terrific opportunity to get them involved in the kitchen. They can help mix the batter and while the puffs are baking everyone can prepare the fruit. Add your kid’s favorite fruit to the mix and they’ll gobble them up.

I don’t know the reason these puff when they are baked, I’m not trained in the culinary arts. I just know it’s really cool to watch them puff as they bake and kids love to watch it too. By the way they deflate when removed from the oven…just so you don’t think something went wrong. Any smallish baking dish works well for this, just try to keep the size in the 3 1/2″ to 5″ range. We used individual size aluminum pie/tart pans this time but I think a large muffin pan might work better.

So gather the kids in the kitchen and share your love of cooking with this fun and healthy breakfast treat.

Pancake Puffs with Fruit

Description

A delicious breakfast or dinner the kids {and adults} are sure to love. Recipe from PocketChangeGourmet.com. Adapted from Kid Favorites Made Healthy Cookbook


Ingredients

Scale
  • 1 whole egg plus 1 egg white
  • 1/4 cup all-purpose flour
  • 1/4 cup milk
  • 1 tablespoon cooking oil
  • 1/4 teaspoon salt
  • 2 cups fresh fruit
  • 2 tablespoons orange marmalade, heated in a microwave

Instructions

  1. Coat small pie plates or foil tart pans with cooking spray
  2. In a large bowl whisk together egg, flour, milk, oil and salt until smooth
  3. Divide batter into four pans
  4. Bake for 25 minutes in a 400 degree oven until brown and puffy. Turn off oven and let stand in oven for 5 minute more before removing
  5. Immediately transfer pancakes into small bowls, spoon on fruit and drizzle with warmed marmalade

Notes

Liz says…these were delicious, you can also add apple juice to the fruit if you don’t have any orange marmalade
