Ingredients

  • 1 boneless turkey breast 2-3 pounds
  • 12 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1 teaspoon minced dry onion
  • 1 teaspoon seasoned salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon pepper
  • 1/2 teaspoon parsley flakes
  • 1/2 teaspoon basil

Instructions

  1. Thaw turkey breast completely in the fridge
  2. Preheat oven to 350 and set out roasting pan or heavy deep oven proof dish
  3. Combine all seasonings in a small bowl and mix well
  4. Coat turkey with olive oil and rub in the spice mixture
  5. Place in baking pan on top of 3 or 4 aluminum foil balls
  6. Cook at 350 degrees for 90 minutes until internal temperature is 165-170 degrees
  7. Remove from oven and cover with foil, allow to rest 20-30 minutes before slicing
  • Prep Time: 5 minutes
  • Cook Time: 1 hour 30 minutes

  1. Hi. Can you please email me and and explain what 4 and 5 foil balls are and etc how to do this…. thank you tons..

    • Hi Marci, the foil balls are balls of foil – take a small piece of foil and crunch it into a ball. Place them in the bottom of the pan then place the turkey on top to cook.

      • Do you put the top on the roasting pan to cook or bake uncovered?

        • Hi Allison, we cook our turkey breast uncovered, however it won’t hurt to cook it covered. Just be sure to check the thermometer for the correct temperature.

      • It seems it would be easier to use a small wire rack. What is the purpose of the foil, except to keep it off the bottom of the pan?

    • Most turkey breast will feed 5-6 people, I usually allow 1/2 pound of turkey breast for each person.
