Summer is a great time for spicy foods and cookouts! Time to add a little spice to it with this Mexican Pasta Salad which is the perfect side for your cookout! It even goes great with any meal and is great for any occasion.
Pasta is one of my favorite dishes! It’s easy to make and versatile, making it great to fit in as a side to any dish. In fact, I whipped up this particular pasta to go along with our bratwurst cookout. My family needed a side to go with it, and so I turned to pasta for an idea. After brainstorming for a bit, I gathered up some ingredients and set out to make something with a bit of a kick. Pasta fit the bill perfectly, all I had to do was add a few yummy things and try out something fairly new: sriracha. Mixed with some ranch dressing, this sauce added a nice kick of flavor to the pasta. It just goes to show you that no matter what you need, pasta helps in a pinch.
Pasta has always been a great choice as a side for any cookout or even any meal! It’s also been one of my favorite lunch time foods for years. Taking the photos of this recipe was crazy! We were in a frenzy to beat the rain as we rushed in and out. We even had to hold up umbrellas to ensure that nothing got wet! Luckily we barely managed to beat the rain and enjoyed a great cookout with this delicious side dish. It was certainly a crazy day but in the end everything turned out great and we got to sit down and enjoy this great dish.
Pasta comes in many shapes and sizes, and this pasta will fill in the perfect spot in your next cookout. With a bit of spicy flavor, this side dish will surely liven things up at your next cookout! Even with our skies being a bit cloudier than we preferred, we were able to make this pasta easily and put it along with our other food for the cookout. - 12 oz. of bow tie pasta
- ½ can of corn, drained
- 5 strips of bacon, cooked
- ½ teaspoon of sriracha
- 1 cup of ranch dressing
- 1 small can of diced tomatoes with green chilies, drained
- Cook bacon - on the stove on in the oven
- Boil pasta until tender, according to directions on the box
- Drain the corn and cook on the stovetop until it is browned
- Chop bacon into bite sized bits
- Mix together all ingredients, except ranch dressing and sriracha
- Mix the sriracha and ranch dressing together.
- Stir to coat pasta
