We have a little confession…we often buy the boxes of flavored rice to serve as a side dish. I’m not really sure why, because making it from scratch doesn’t take long at all. The only thing I can think of is that we never had a really good recipe to use.

Well, now all that has changed, because this recipe for Mexican Red Rice is delicious, and super easy too!

Mexican Red Rice

Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 1/2 cup onions, chopped finely
  • 2 cloves garlic, minced
  • 1 teaspoon ground ancho chili pepper or chili powder
  • 1/4 teaspoon kosher salt
  • 1 cup long grain rice, brown or white rice {we used brown}
  • 1 3/4 cups chicken or vegetable stock
  • 3/4 cups salsa
  • 1/4 cup water
  • 1/2 cup cilantro, finely chopped

Instructions

  1. In a medium saucepan, heat oil over med-high heat
  2. Add onions, garlic, ground ancho chili pepper and salt, cook for 2 minutes
  3. Add uncooked rice, cook and stir for 1 minute
  4. Add broth, salsa and water
  5. Bring to a boil, reduce heat, cover and simmer for 20 – 30 minutes or until rice is tender
  6. Remove pan from heat, remove lid and cover with a clean kitchen towel to absorb any liquid, replace lid and let set for about 5 minutes
  7. Fluff with fork and stir in cilantro
  • Prep Time: 5 minutes
  • Cook Time: 30 minutes
