Doug’s become quite the fan of marinating for grilling this past Summer and even though the weather is getting chillier he still fires up the grill once or twice a week. He had planned on trying the World Harbors Jamaican Jerk marinade for quite awhile so this weekend Doug grabbed some at the store and we came up with these Jamaican Jerk Chicken Fajitas.

After marinating the chicken breast as directed on the bottle Doug threw them on the grill, he says grilling them makes it more authentic. While they were grilling we sauteed together onions, garlic, green and orange peppers with a little ginger root for good measure. We were able to use some peppers we had stockpiled in the freezer from the Summer, not only is this a good time saver but it’s nice to know you saved some money by thinking ahead when we had fresh veggies to store.

It took about 20 minutes for everything to come together and we finished off the wraps with a little sauce that has become a favorite trick of his.

To add a little zing take 2 tablespoons of mayonnaise and 1/2 to 1 teaspoon of your marinade and whisk together. This is great as a condiment or dipping sauce.

Jamaican Jerk Chicken Fajitas Recipe

Ingredients

Scale
  • 3 boneless,skinless chicken breasts
  • 1 bottle World Harbors Jamaican Jerk Marinade
  • Peppers {red, yellow, orange and green}
  • 1 medium Onion
  • 2 cloves Garlic, minced
  • 1 inch Ginger Root, minced
  • 1 Tablespoon Sesame See
  • Tortilla Shells

Dipping Sauce

  • 2 tablespoons Hellmann’s Mayonnaise
  • 1/2 to 1 teaspoon World Harbors Jamaican Jerk Marinade

Instructions

  1. Place chicken in a large resealable bag
  2. Add marinade
  3. Refrigerate for 5 hours
  4. Grill chicken breasts
  5. In a large skillet, heat oil and saute together the peppers, onion, garlic and ginger root
  6. Let chicken rest for 5 minutes before cutting into strips

Build Your Fajita

  1. Slather a Tablespoon of the dipping sauce onto a warmed tortilla shell and pile on peppers and onions along with chicken
  2. Enjoy!
