There is one appliance in the kitchen that is often times under used…the Slow Cooker! I know I’m definitely guilty of it. Another thing I am guilty of is not using my Slow Cooker during the Summer months as much as I should, and really it’s probably a better appliance during the hot months than it is during the cold months when you want to have the oven on.

This Honey Hoisin Chicken can be served a number of ways, like we did in a sandwich lined with lettuce and topped with bean sprouts. Serve the chicken whole on a bed of rice or noodles or it would also be great on a salad, like we did with the 3 Ingredient Barbecue Chicken Salad.

I first spotted this recipe for Slow Cooker Honey Hoisin Chicken over at Eat at Home. Tiffany does an amazing job using her Slow Cooker, in fact she offers a menu plan service full of Slow Cooker Recipes. And she will be sharing Summer Slow Cooker Recipes starting in June. Although we thought the original recipe was great, we did change it up a bit by using Holland House Sake Cooking Wine instead of white wine. We also gave the recipe a try in our new Power Cooker. There will be more details on it coming soon, but we wanted to give it a try a few times before we filled you in on the details. So far, we love it. This chicken cooked in 30 minutes, and was nice and juicy too.

We have several of the Holland House cooking wines in the pantry and use them for a quick splash of flavor on a salad or even meat. Mizkan makes several different flavors of cooking wine, but Sake is the newest flavor. We thought it would pair nicely with the Soy Sauce, Hoisin Sauce and Honey in this chicken recipe, and we were right.

Honey Hoisin Chicken Sandwiches in the Slow Cooker

Description

Ingredients

Scale
  • 46 chicken breast, skinless & boneless
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup hoisin sauce
  • 1/4 cup Holland House Sake Cooking Wine or white wine
  • 1 tablespoon finely chopped fresh ginger or 1/4 teaspoon ground ginger

Sandwiches

  • Sesame Seed Buns
  • Lettuce – we used mixed greens
  • Bean Sprouts

Instructions

  1. Place chicken in slow cooker
  2. Combine all sauce ingredients and pour over chicken
  3. Cook 4-5 hours on high or 7-8 hours on low

Sandwiches

  1. Allow chicken to set 10-15 minutes to cool a bit, then shred using 2 forks, return to slow cooker or add sauce to the chicken
  2. Add lettuce to bottom of bun, add chicken and bean sprouts

Notes

If you are using a Power Cooker, increase liquid to 1/2 cup each. Recipe adapted from Eat at Home
