With the kids back in school, I’ve seen a lot of commercials for the popular after-school snack, Pizza Pockets. I’m not talking about the kind you buy pre-packaged, stick in the little cardboard container and microwave for a couple of minutes. I’m talking about REAL pizza pockets, the kind that involve dough, pizza sauce, melted mozzarella cheese, and whatever other delectable ingredient you would like to stuff them with.

What’s fantastic about homemade pizza pockets is that each person can have their favorite ingredients in their own personal pocket. It’s basically like making a mini calzone. I think they would make a fun Game Time snack too, everyone could make their own, put them in the oven and they are ready in about 10 minutes.

Homemade Pizza Pockets

There a few ways you can make your own Homemade Pizza Pockets. The first is to make your own Pizza Dough, we like using our bread machine. The second is to buy pizza dough from the grocery store. And the third, which the way we opted for this time around – use canned biscuits. We used regular tube biscuits, nothing fancy, the kind you can get with 4 tubes in a package together.

Because we kept it super easy, I bet the kiddos would even have fun putting them together themselves. I find that my kids will eat MORE of something if they have helped make it. My son made a very interesting “wrap” one time and ate the entire thing. It’s very gratifying for a child to be able to create their own meal and if they get to do that alongside you, that is a great thing for you both to be able to participate in.

Description

A fun treat for Pizza Night, Tailgating or even after school snack.


Ingredients

Scale
  • Refrigerated Tubed Biscuits

Pizza Sauce

  • 1 small can tomato paste
  • 1 clove garlic, minced
  • 1 teaspoon butter
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • ½1 cup of water

Toppings

  • Pepperoni
  • Sausage
  • Mozzarella Cheese

Instructions

Pizza Sauce

  1. Melt butter over medium heat in a small sauce pan.
  2. Mince garlic and add to pan and saute for 2 minutes.
  3. Add tomato paste and dried herbs and combine.
  4. Stir in water to achieve desired consistency, usually take at least ½ cup.
  5. Simmer for 5 minutes to join flavors.
  6. Cool

Pizza Pockets

  1. Preheat oven to 400 degrees
  2. Very lightly sprinkle flour on a hard surface and roll out each biscuit
  3. Add about 1/2 teaspoon pizza sauce to one side of circle
  4. Add cheese and toppings
  5. Fold over and seal with a fork
  6. Brush with oil
  7. Bake at 400 degrees for 10 minutes

  2. I was wondering if you think they would freeze well so the kids could warm them for snacks?

  3. angie: yes pizza pockets (also called calzones) freeze very well. It is essentially still a pizza with pizza ingredients. We freeze them all the time. I fold the raw pizza dough over the ingredients and then instead of putting them in the oven, you wrap them in wax paper. Put your calzones in a sealed freezer bag and voila! You have a handy dandy freezer meal. Preheat oven to 450 degrees. Bake about 30 minutes from frozen, but that time is really dependent on how large your calzone is.
    You can watch it in the oven or stick a probe thermometer into the calzone and just let it beep at you when it hits about 160 degrees.

    • Hi GS, You could certainly saute some vegetables to add to the pizza pockets or I would think there are vegetarian alternatives to sausage available as well.
