Happy Monday my friends! Did you enjoy your weekend? It was a  bit cold here, but we braved the weather for baseball on Saturday and worked most of the day on Sunday doing a cupcake photo shoot for a magazine.

We often grill our main dish, but it’s often difficult to come up with a side dish to cook on the grill. This Grilled Potato Salad is perfect! It can be adapted many different ways just by adding your favorite ingredients. Our original plan was to add mayonnaise like a traditional Potato Salad, but after the potatoes were done, and I mixed in the bacon and eggs, it was so pretty, we decided not to slather it with mayo, but instead to add Italian Dressing.

The only time we have made potatoes on the grill is when we make Potato and Mushroom Packets. But we will definitely be grilling up many different kinds of potatoes during the hot Summer months.

Doug added the bacon to the grill also, cooking it on the cast iron griddle. The potatoes were washed and cut into wedges, tossed with a little oil and sprinkled with salt and pepper, then placed on the grill to cook for 20-30 minutes over medium heat. It works great if your grill has an upper grate so you can move the potatoes around so they don’t get too brown. Otherwise set your coals up for indirect grilling and move around as you need to.

Grilled Potato Salad Recipe

Ingredients

Scale
  • 68 Potatoes {depending on size}
  • 24 tablespoons Oil {just enough to coat the potatoes}
  • Salt and Pepper to taste
  • 34 hard boil eggs
  • 34 strips cooked bacon
  • 34 green onions, chopped
  • Italian Dressing {we used about 1/2 a bottle}

Instructions

  1. Wash potatoes and cut into small wedges
  2. Place in bowl and coat with oil, sprinkle with salt and pepper
  3. Place on grill on medium heat and cook about 20-30 minutes or until fork tender
  4. Cook bacon and eggs
  5. After potatoes are done, let them cool slightly and cut into large chunks, place in bowl
  6. Add crumbled bacon, chopped eggs and chopped green onions
  7. Stir gently
  8. Add dressing a little at a time until potatoes are well coated but not soaked

Notes

Liz says…Cooking the bacon on the grill was great. No mess or smell in your kitchen.

Doug says…Tastes like breakfast!
