Growing up with parents that cherished their yard and garden is something that I hold dear to my heart. I remember sitting under the big maple tree and stemming Green Beans for hours so that my Mom could can them. She would always make enough for a big pot of fresh cooked green beans to have for the evening dinner. I’d like to share her recipe with you.

This is the traditional way to fix fresh green beans and can be cooked at home or even over a camp fire during your next outing. She used bacon but you could substitute chunks of ham depending on your taste. It’s a simple recipe that we have used over the years when we feel a little nostalgic.

My helper cleaned the beans for me while I was baking the Classroom Kids Cupcakes.

Fresh Green Beans

Ingredients

Scale
  • 2 pounds fresh green beans, washed and stemmed
  • 1 large onion, cut into pieces
  • 3 strips raw bacon
  • 1 tablespoon Kosher salt per 8 cups of water

Instructions

  1. Wash and stem green beans {snap in half if they are long}
  2. Add to large pot on the stove
  3. Add 8 cups of water {a little more, being sure to cover beans}
  4. Add onion, bacon and salt
  5. Bring beans to a boil
  6. Reduce heat and simmer for at least 2 hours depending on how you like your beans cooked
  • Prep Time: 15 minutes
  • Cook Time: 2 hours

  2. this is how my mom made green beans when i was growing up. We called them “greasy beans”. She would also add cut-up potatoes in hers. I can’t go through summer without them.

  3. So cool seeing our Deep Covered Baker in this picture!!! Love it!! I use mine on average 4-5 a week! Liz, did you actually cook the green beans in the DCB? If so, can you share times, etc. Have never fixed green beans in it nor have I ever seen a recipe to do so. I’d love to share a new DCB recipe with my team!! Thanks!!

    • Hi Stacia, We did not cook them in the baker, mostly because the green beans are better on the stovetop, in my opinion. I bet you could though. I need to look up some recipes to use it. My SIL gave it to me and I haven’t used it yet, except to film in.

      • Liz, we just got back from moving our oldest son into college for the first time but as soon as I stop moping around lol I’ll email you some awesome recipes for the DCB. I use my on average of 4-5 times a week, especially in the micro with the hot weather we’ve been having. Love not having to turn on the oven!! Have a great week!!!
