Fourth of July Food: Fruit Parfaits

We continue our quest to share with you delicious, and budget friendly recipes for your Fourth of July Celebration! We have shared Fourth of July Main Dishes with the All-American BurgerSalads with Seven Layer Salad in a jar, Sides and this easy 3 ingredient Patriotic Dip.

Today we are chatting about Fruit, there’s nothing more refreshing than slicing open a fresh watermelon or a bowl full of strawberries and blueberries. We’ve combined all those delicious fruits and added a Creamy Lime Dressing to finish it off, and served it up in a Fruit Parfait!

Any of your favorite fruit will work of course, we used watermelon, strawberries and blueberries and topped with a Creamy Lime Dressing recipe adapted from Betty Cr0cker. We found the fun cups at Party City, they have several different shapes and sizes, these are called Liteware Tall Cups.

And fun for the kiddos too…serve the Fruit Parfaits in an Ice Cream Cone…they will love it! Just layer their favorite fruit in the cone, and top with the Creamy Lime Dressing.

Fruit Parfaits with Creamy Lime Dressing

A fun way to enjoy Summer fruit. Recipe from PocketChangeGourmet.com. Adapted from Betty Crocker
Ingredients
  • Fresh fruit - your favorites, cut into small pieces
Creamy Lime Dressing
  • 1 package {8 oz} cream cheese, softened
  • ½ cup frozen limeade concentrate, thawed
  • ¼ cup powdered sugar
  • 1 cup COOL WHIP Whipped Topping or Whipping Cream
Instructions
  1. Clean and cut fruit
  2. In a medium bowl, cream together the cream cheese, limeade and powdered sugar until smooth.
  3. Fold in whipped topping
  4. In a small glass {for individual servings} or a bowl layer fruit, top with dressing
  5. Serve immediately or cover and keep in fridge up to 2 hours before serving, store leftovers in fridge
Notes
Liz says...Serve in individual glasses or in Ice Cream Cones for a fun presentation.
