Happy Friday my friends! Are you ready for the weekend? We have had a super crazy week…well in fact, the last couple weeks have been busier than normal. So we are definitely ready for the weekend.

Last week, we kicked off Farmer’s Market Friday with Rhubarb. We were really excited to see such a good response from everyone, thank you! Today we are featuring Asparagus

Just like Rhubarb, my Dad used to grow Asparagus in his garden. And there was always that 4-6 week period during the spring when there was nothing that tasted better than a batch of fresh asparagus. We’ve always wanted to grow our own and have thought many times about doing so. Since it takes three years from when you plant asparagus crowns to the first harvest, Doug & I just don’t have the patience to wait to enjoy them.

According to the Michigan Asparagus Advisory Board, “asparagus is a nutrient-dense food which in high in Folic Acid and is a good source of potassium, fiber, vitamin B6, vitamins A and C, and thiamin”. It also has no fat or cholesterol and is low in sodium. And did you know that the larger the diameter the better the quality, all these years I’ve always gone after the smallish ones.
