There are times when I come across a recipe and wonder why I have never made it before. This Frittata Recipe is one of those times. While I have served many different dishes for breakfast, and always include breakfast on our Monthly Menu Plan at least a couple times per month…I have never made a Frittata…until yesterday.

So what exactly is a Frittata?

According to Wikipedia…”Frittata is an egg-based dish similar to an omelette or quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. It may be flavored with herbs.”

A Frittata can be as simple as a couple ingredients or as complex as several. Using up leftovers works perfectly for this dish. I added all of our favorite ingredients…sweet potatoes, ham, bacon, mushrooms, asparagus and of course, the eggs and cheese. However, you can certainly use what ever ingredients you have on hand. White potatoes can easily be substituted for the sweet potatoes, and any vegetables that you have leftover is fine.

We live in a place where we have about any ingredient we could ever want or need, just a short distance away at our local Walmart. Because of this endless bounty, we are bound to have an excess of ingredients, creating leftovers. I’ve experienced many a holiday gathering where everyone has brought so many wonderful things, it is impossible to eat them all. The great thing about the frittata is that you can either buy the ingredients specifically for it, or you can just use what you have! No one will know the difference because the taste will be top notch. It’s a wonderful thing to mix up those favorite breakfast foods and make your family come back for more. It’s also a fun thing to have for dinner – because who doesn’t like breakfast for dinner sometimes?

We like cooking bacon in the oven, but for this recipe it’s best to fry it in a large heavy skillet. While the bacon and vegetables are cooking, boil the sweet potatoes.

Frittata.asparagus

After the bacon is cooked, it’s time to saute the asparagus and mushrooms until tender. If you are using white potatoes instead of sweet potatoes, you would add them in with the vegetables to cook.

Next, it’s time to add the ham. And don’t forget to crumble the bacon and add it back in, we can’t forget that bacon.

And lastly, comes the eggs and milk, after whisking them together.

A frittata can serve a dual purpose during the holidays. It can be used to feed a crowd – say that unexpected family that didn’t RSVP but showed up anyway. Or those high school and college friends of your kids that have nowhere to go so, surprise! “Mom, can they please stay?” Don’t let the panic set in. The frittata is your friend and because it is so hearty, it will stick to the ribs of those hungry kids and families.

Ingredients

  • 2 sweet potatoes, peeled and cut into small cubes*
  • *or substitute for 3-4 potatoes, peeled and cut into small cubes and see note about cooking
  • 1/2 cup onion, finely chopped (more if you like onion)
  • 45 pieces of bacon
  • 1 cup asparagus, sliced into 1” pieces
  • 1/2 cup ham, chopped
  • 56 fresh mushrooms, sliced
  • 8 eggs
  • 1/2 cup milk
  • 1 cup cheddar cheese, shredded

Instructions

  1. Preheat oven to 350. Grease a 9×13 baking pan. Set aside
  2. In a saucepan full of water, boil sweet potatoes until tender. About 10 minutes. Drain. *
  3. * If using regular white potatoes, omit this step. Add potatoes in step 3 after cooking bacon and heat until soft.
  4. In a large skillet, cook bacon until crispy. Drain on paper towels and set aside.
  5. Return skillet to stove top and add onion, asparagus and ham to the bacon grease. Cook for 4-6 minutes until onions are translucent, and mushrooms and asparagus are cooked.
  6. Crumble or cut up bacon and add to skillet. Add ham and sweet potatoes. Stir to heat through.
  7. In a separate bowl, add eggs and milk and whisk until fluffy. Add to skillet and cook on the stove top until eggs are set on the bottom, and just beginning to set on the top.
  8. Transfer mixture to prepared 9×13 pan and sprinkle with cheese.
  9. Bake for 15 minutes or until a knife inserted in the enter comes out clean and the cheese is melted.

    Ciao!
    This looks yummy, I hope you don’t mind an Italian saying that frittata means “fried”, basically…so you are supposed to fry the mixture in a pan with olive oil and turn it when cooked on one side or put a lid on the pan to help the upper part cooking. That’s frittata 😉
    Nonetheless, the oven option can be handy!

    • That’s interesting, I didn’t know that Frittata means fried, part of the recipe comes from Alton Brown, and he called it Frittata.
